Quick Broccoli 1 head of broccoli 1/4 cup frozen edamame 2 cloves of garlic minced A dash of sesame oil A generous dash of tamari/soy A dash of red wine vinegar, or any vinegar you have on hand Around a tbsp of honey or maple syrup Chilli flakes Steam broccoli and edamame until almost cooked all the way through. Add all ingredients and let all cook and reduce down until broccoli and edamame is ready. You can add some cornstarch to thicken the sauce! But remember to add it to a separate cup with a little bit liquid so that it doesn't clump. Finish off with some kimchi and avocado Lentil and Barley Salad Cook 1/2 cup of barley in veggie stock as per instructions 1 tin of lentils, rinsed 1 cucumber diced 1 tomato diced a bunch of dill, parsley, basil chopped Dressing (all approx, make sure to taste test) 1 tbsp dijon 2 cloves of garlic, minced 2 tbsp apple cider vinegar 2 tbsp red wine vinegar 1 tbsp capers, finely chopped 1 tbsp honey/maple syrup 1/4 cup of olive oil salt and pepper to taste Mix all ingredients together except for the olive oil. Slowly drizzle the olive oil until it all becomes emulsified. Marinate chopped veggies and lentils in dressing as barley cooks. When barley is cooked mix in with lentils and herbs. Quesadilla Tofu Scramble Sliced mushrooms Minced garlic Sliced onion 1/4 block of firm tofu A dash of soy sauce A generous sprinkle of nutritional yeast A dash of soy milk (you can avoid this, i like it a bit creamy) 1/2tsp of turmeric 1 tsp cumin Salt and pepper Refried beans Cheese (I used vegan cheese)
